Easy Vegan Earth Cookie Recipe

We absolutely love working around different themes throughout the year, and recently we’ve been focusing on the theme of space! As part of our Space Weekend, we decided to make tasty vegan earth cookies!

 

Easy Vegan Earth Cookie Recipe

We love baking together. It’s such a simple pleasure. Watching George and Molly measure out the ingredients, their excitement growing as the mixture comes together, is such a joy. There are also so many educational benefits, from being creative, starting conversations about space and so much science, not to mention mathematics, as they add the ingredients together!

 

 

So let’s get on and make some cookies!

 

Ingredients

For this recipe, you’ll need:

 

  • Blue food colouring
  • Green food colouring
  • 1 1/2 cups plain flour
  • 1  teaspoon bicarbonate of soda
  • 1/2 cup vegan margarine (we use vitalite)
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

 

 

Method:

 

  1. Preheat the oven to gas mark 4/350°F/180°C.
  2. Line a baking tray with baking paper.
  3. Mix the sugar and margarine together using a KitchenAid mixer or by hand.
  4. Add the vanilla and mix.
  5. Add the vanilla extract and salt, and mix.
  6. Sift the flower into the bowl, along with the bicarbonate of soda, and mix.
  7. Add a dash of water or plant based milk if it’s too dry, but make sure it forms a fairly solid ball.
  8. Split the mixture in half and place into separate bowls.
  9. Add the blue food colouring to one bowl, and the green to the other. Mix until the colour is evenly spread throughout.
  10. Take a chunk of each colour and mix them together by rolling them around between your palms. You might need to break it in half and mix it back together to get the ‘earthy’ look!
  11. Roll it into a ball and then place it onto the baking paper, squashing it down a little with the palm of your hand.
  12. Once they’re all made, pop them in the oven for 10-12 minutes. Check on them halfway through, because if you have an oven like ours, you’ll need too haha!
  13. Let them cool for a sec, then enjoy!

 

 

We loved making these cookies. It was fun and exciting, and it tied in perfectly with our space themed fun. We had a lovely munch on them with a movie, and they were delicious!
